Chicken, turkey and hens
Meat from chickens, turkeys and hens causes low greenhouse gas emissions per kilogram of meat compared to other meat, but more than for vegetables. Feed has a major impact on the climate impact of chicken meat when it is produced. Animal health and welfare are also important sustainability aspects to take into consideration when procuring chicken, turkey and hen meat.

A low mortality rate and healthy poultry result in lower environmental and climate impact per kilogram of meat. Moreover, Article 13 of the Treaty on the Functioning of the European Union states that the Union and the Member States shall pay full regard to the welfare requirements of animals as sentient beings when formulating and implementing Union policies. Defining requirements for animal welfare and animal health when procuring chicken may therefore help to reduce environmental and climate impact and ensure that animals are treated with respect.
Production of chicken meat takes place in relatively similar ways all over the world, but with differences in terms of requirements in respect of animal husbandry, animal health and disease control. Chickens are reared to about 1.3–4 kg and slaughtered at five to six weeks of age, if they are of a fast growing breed. In the case of organic production, chickens shall have access to outdoor areas and their feed shall be organically produced. The rearing period is longer, which means higher feed consumption per kilogram of meat. Organically produced chickens are slaughtered at 81 days of age, or they can be slaughtered at another time when slow growing breeds are used.
Consumption of chicken meat has been increasing for a long time. Production in Sweden has also increased, as have imports and exports. Poultry meat imports mainly come from Denmark, Germany, the Netherlands and Poland, according to Jordbruksverket marknadsrapport matfågel (2021) [Swedish Board of Agriculture market report on poultry meat (2021)]. The Swedish Board of Agriculture also mentions that chicken meat from Denmark may be imported from Thailand or Brazil, for example.
Jordbruksverkets marknadsrapport matfågel (2021) [Swedish Board of Agriculture market report on poultry meat (2021)] states that imports of poultry meat to Sweden increased sharply up to and including 2016, but have remained fairly stable since then. Poultry meat exports have also increased. In 2020, the year of the pandemic, there was a clear decline in imports of poultry meat. The most likely explanation for this is that the restaurant industry saw a decrease in numbers of guests: this is an industry in which the import percentage is significantly higher than in supermarkets and the public sector. Imports increased again in 2021 as restrictions were eased and society returned more to how things were before.
The rearing of turkeys is similar to the rearing of chickens. Both the production and consumption of turkey are relatively small in Sweden, but on the increase.
Chickens are defined as hens and cockerels in accordance with the definition in the Swedish National Board of Agriculture’s regulations and general recommendations on poultry farming in agriculture etc. (SJVFS 2019:23).
